Durch diesen Fermentationsprozess bilden Zucker und Aminos\u00e4uren zusammen Melanoidin, wodurch die Zehen schwarz und weich werden.<\/p>\n<p>&nbsp;<\/p>\n<h3>So entsteht schwarzer Knoblauch!<\/h3>\n<p>Durch die Fermentation werden auch mehr Antioxidantien freigesetzt (198 statt 118), so dass wir zu Recht sagen k\u00f6nnen, dass schwarzer Knoblauch fast doppelt so gesund ist wie wei\u00dfer Knoblauch. Wei\u00dfer Knoblauch enth\u00e4lt haupts\u00e4chlich Allicin, das nur in Fett l\u00f6slich ist. Schwarzer Knoblauch enth\u00e4lt S-Allylcystein, das in Wasser l\u00f6slich ist. Das bedeutet, dass der K\u00f6rper die Antioxidantien schneller und leichter aufnimmt. Aufgrund seiner weichen, gelartigen Textur und seines reichen Geschmacks kann schwarzer Knoblauch als Zutat oder einfach nur als gesunder Snack verzehrt werden.
