Ingredients:
For the ratatouille:
– 2 tbsp of oil
– 2 tsp of black garlic paste
– ¼ red onion
– 100 gr bell peppers
– 100 gr zucchini
– 100 gr eggplant
– Salt and black pepper to taste
– Dried oregano
– Dried rosemary
– Thyme
– 200 ml tomato sauce
– 1 tsp of sugar
For the root vegetable mash:
– 100 gr potatoes
– 100 gr sweet potatoes
– 100 gr carrots
– 50 gr butter
– 50 ml milk
– Salt and black pepper to taste
Instructions:
For the ratatouille:
In a hot pan add oil and start by frying the onion and black garlic paste.
After 2 minutes add in the rest of the vegetables. Season with salt, black pepper and all other herbs and cook for 10 minutes. Now you can add in the tomato sauce and sugar. Let it simmer on a low heat for 10 minutes and then take of the heat.
For the mash:
Cook the vegetables in boiling water for about 30-40 minutes, until soft. Drain and mash with butter, milk and season with salt and pepper.
